OUR PROCESS

We’re proud to bake each of our cakes from scratch using only the highest quality ingredients. Our eggs are Organic and Certified Humane®, and all of our jams, curds, mousses, and buttercreams are made in-house. You’ll never find any pre-made fillings in our kitchen.

CARMELA TRACY

Owner, Creative Director, Pink Police

Inspired by New York’s vibrant culture, Carmela’s artistic pursuits include working at a fashion magazine and exhibiting her paintings on Fifth Avenue. After obtaining her Masters degree at New York University in Marketing & Design and studying cake design at the Institute of Culinary Education, Carmela decided to return to Fifth Avenue and use cakes as her canvas.

BRANDON BAKER

Owner, Head Chef, Cake Whisperer

Born in New York City, Brandon has always had a fascination with the chemistry of food. After graduating from the University of Pennsylvania with a degree in Evolutionary Psychology, he moved back to New York and put his passion to work. His mathematical mind and (often irrational) obsession with the kitchen scale drives everyone crazy, but the results are worth it.
